Cheesy Beefy Burrito Wrapped in Fried Cheese

- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons cornstarch
- 1/4 cup all-purpose flour
- 2 eggs
- 1/4 cup milk
- Oil for frying
- 4 large flour tortillas
- Optional toppings: sour cream, guacamole, diced tomatoes, sliced jalapenos
Instructions:
- Cook the ground beef in a skillet over medium heat until browned, stirring occasionally. Drain off any excess fat.
- Add the taco seasoning mix to the skillet with the ground beef and follow the package instructions to prepare the seasoning.
- In a bowl, mix together the shredded cheddar cheese and shredded mozzarella cheese.
- In a separate bowl, whisk together the cornstarch, flour, eggs, and milk to make the batter.
- Heat the oil in a large, deep skillet over medium-high heat.
- Spoon 1/4 cup of the cheese mixture onto the skillet and spread it into a circle about the same size as the tortilla. Cook the cheese until it is melted and bubbly, then place a tortilla on top of the cheese.
- Spread 1/4 of the beef mixture on the tortilla, then top with another 1/4 cup of the cheese mixture.
- Use a spatula to carefully fold the tortilla in half and press down lightly to seal.
- Use tongs to carefully flip the burrito over so that the cheese-covered tortilla is facing down in the skillet.
- Cook the burrito until the cheese is melted and the tortilla is crispy and golden brown, about 2-3 minutes per side.
- Repeat with the remaining tortillas and ingredients.
- Serve the burritos, hot with optional toppings such as sour cream, guacamole, diced tomatoes, and sliced jalapenos.
