Cheesy Beefy Burrito Wrapped in Fried Cheese

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons cornstarch
  • 1/4 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • Oil for frying
  • 4 large flour tortillas
  • Optional toppings: sour cream, guacamole, diced tomatoes, sliced jalapenos

Instructions:

  1. Cook the ground beef in a skillet over medium heat until browned, stirring occasionally. Drain off any excess fat.
  2. Add the taco seasoning mix to the skillet with the ground beef and follow the package instructions to prepare the seasoning.
  3. In a bowl, mix together the shredded cheddar cheese and shredded mozzarella cheese.
  4. In a separate bowl, whisk together the cornstarch, flour, eggs, and milk to make the batter.
  5. Heat the oil in a large, deep skillet over medium-high heat.
  6. Spoon 1/4 cup of the cheese mixture onto the skillet and spread it into a circle about the same size as the tortilla. Cook the cheese until it is melted and bubbly, then place a tortilla on top of the cheese.
  7. Spread 1/4 of the beef mixture on the tortilla, then top with another 1/4 cup of the cheese mixture.
  8. Use a spatula to carefully fold the tortilla in half and press down lightly to seal.
  9. Use tongs to carefully flip the burrito over so that the cheese-covered tortilla is facing down in the skillet.
  10. Cook the burrito until the cheese is melted and the tortilla is crispy and golden brown, about 2-3 minutes per side.
  11. Repeat with the remaining tortillas and ingredients.
  12. Serve the burritos, hot with optional toppings such as sour cream, guacamole, diced tomatoes, and sliced jalapenos.
